The LECOM Institute for Successful Living announced on Apr. 16 that it is focusing on enhancing the dining experience in its senior living communities, emphasizing both nutrition and resident engagement under the direction of Culinary Director Frank Tobia.

The organization says this initiative matters because mealtime can serve as a source of comfort, connection, and improved well-being for seniors. The approach aims to transform dining from routine sustenance into a meaningful daily event.

Tobia said, “Number one is the passion you have. You have to have a love for cooking. You can tell if someone has a love for it or not. There’s an extra something like grandma’s cooking.” He added that hiring and training practices are shaped by this philosophy, with staff encouraged to create meals that foster community and satisfaction among residents.

Nutrition remains central to the program. “Nutrition in general enhances the meal,” Tobia said. “It shouldn’t be seen as a limitation; it enhances the food.” Registered dietitians, nutritionists, and nursing teams work together with kitchen staff to design menus that meet diverse dietary needs while maintaining flavor and appeal.

Residents are invited to participate in menu planning through council meetings and open feedback channels with Tobia. “My door is always open if residents want to try something new or tweak a recipe,” he said.
